In the description of the glave Sentinel it says, he is good against mounted units and giants, when judging the bonuses, he is only strong against mounted units.
he is categorised as anti giant, though.

Categories will be remade, anti-giant bonus was removed when glade sentinel was expanded into full sub.

Yes. Before sentinel was only such unit.
No guardian, protector, sentry, defender or vanguard.

Thus this sentinel was an all-round unit with lots of not that good bonuses that is best at nothing.
