There should be limits on how many castle one can have at a time. Have several games now that is dogged down by castles which line every landing point and no one can make any headway.
Maybe make them linked to the number of towns since they can make units.

Yes now castles are the key to victory. They are the only unregulated producing building.

Well build more castles and use trebuchets to kill the castles jk but yeah they kind of are hard to beat but battering rams trebuchets and assasins do fine against them

Don't make the limit to castles too strict though--they take a lot of space and a lot of time to build, and if you have trouble breaking a line of castles from sea, then it sounds like you gave the player too much time to build up (unless the map size is truly huge, in which case you should attack by land from a different direction [and if you can't it's probably a poorly designed map you shouldn't have played on in the first place! ]).
