Ok, well Byzantines were mostly pagan and muslim so I dont think it is that big of an issue, also I am worknig on some saracen units to make them seem stronger and not only simple peseants with sticks.

you can define any stats, as these are only campaign units.
i only check the image/animations in these cases - to be sure they fit to the game look.
