What about a mage turns a unit into a sheep and can turn back within a certain amount of turns

It was a mild thought for humans.

A Debuffing mage named Trickster ( Illusion magic based )

and the effect will be a general one, so not only zombie but any other thing can be set for other units eg: elf mage can cast it on enemy to make it to turn to a "dog" when dies or something.

That was my proposal. It would be great.
Anyway your idea (the unit that becomes a zombie when the countdown ends) might be nice for further zombie improvements (so you can invest into zombies)
